JUNE CHALLENGE

MARCH CHALLENGE
Is time going fast for you guys as well? I do know one thing...I am READY for spring! So the RED challenge was quite fun I must say. I laugh when I hear the words,"take a picture for the blog!" If only more were really posted. lol
This month I have been remembering how much fun we had this time last year. I can't believe I was meeting little Daisy for the first time. I wish we could get all the girls together to play.
Well on to the challenge....by the way, this is Mom's idea. The challenge is to FINISH something you have started. Hey, it was either that or show off some of your spring cleaning...lol. Can't wait to see what you all FINISH!!!! GOOD LUCK!

Easy Summer Dinner


This had to be the BEST dinner that I have made in a LONG time. It was so simple too! Love to get the fresh food out of the garden and this was so good! Brittney even wanted more BEANS....let me repeat that....Brittney even wanted more BEANS!

4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9×13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!
(I USED CHICKEN TENDERLOINS, LET DON'T COST AS MUCH AND THEY ARE SMALLER, BUT THE PERFECT SIZE IN MY OPINION)

(Jenni) My Finished Project

So I saw this on pinterst and wanted it really bad. Well, the darn thing was a template. I was hoping for the finished project. REMEMBER....I really wanted it so I saved the template. This morning, I decieded I would get it DONE! I think mine turned out so much better! Now I just have to cut out mickey heads to tape on. I think my kids will like it. The best part is now that I have one made, I can make one each time we go.

(Brittney) Pizza Balls


These are sooooooooooo delicious!!!!!!! I found these on Pinterest (one of the best websites ever). They are super easy I want you all to try them. Here is how you make them: canned biscuits, mozzarella cheese, garlic, and diced pepperoni all rolled into a ball and put in a muffin pan! Bake for 15 minutes at 450! Add whatever other ingredients you'd like. Dip in sauce! You will all enjoy them. P.S. my red is the pepperoni!

(Mom) CHERRY RED VELVET CAKE

I saw this in the coupon section of the paper and decided right away it would be perfect for the challenge this month. It even included coupons for the cherry filling and cake mix. Bonus as Jen would say. The frosting is homemade cream cheese frosting with white chocolate in it. It was delishous. I thought it was great. I think everyone else liked the oreo cheesecaked bites better though.

(Jenni) Broccoli and Cheese Soup

So in my bountiful basket this week, I got three bunches of broccoli. I love broccoli cooked, raw, and most in soups. I went to the library and found a book called, Taste of Home Big Book of Heart Warming Soups. In it, I found the most amazing broccoli and cheese soup. It was SO easy to make and my family went CRAZY over it.

1Cup carrots chopped
Water to cover (enough to cover the broccoli as well) and boil for about 6 minutes.
Add 2 bunches of broccoli or 1 bag of frozen and cook about 5 more minutes.
In a bowl combine 2-1/2 cups of milk, 1/4 C flour, 1/2 tsp. Salt, 1/4 tsp. pepper until smooth.
Poor into pot with carrots and broccoli...STIRRING so it won't burn. It will thicken as it heats up. When it's almost time to eat, add 1 cup of cheese.
SO SO EASY AND SO SO GOOD!

(Sarah) February is for Red


So the challenge was to find something red. I choose red laundry on a red table :) Having a lot of girls in the house means lots of red and pink clothes.

(K and S) Chocolate Cake Without Eggs!



I was so excited when I found this recipe for chocolate cake without any eggs because the kids love to lick the bowl. This cake is kind of cool because you use baking soda and vinegar and you all know what that means....FUN!

Chocolate Cake


3cups milk


2cups sugar


1/3 cup baking cocoa


1/2 t. salt


2 t. baking soda
1 t. vanilla


3/4 c. oil


2 T. vinegar


2 C. cold water


In a large bowl, mix all ingredients in order given. Blend well; pour into a greased 9x13 baking pan. Bake @ 350* for 35 minutes or until la toothpick tests clean. Cool; frost with chocolate frosting. Serves 12



FROSTING


1/3 C. butter flavored shortening


1/3 C. baking cocoa


2 cups powdered sugar


1-1/2 t. vanilla


2T. milk


Combine all ingredients, blend until smooth.

(Jenni) FHE

With Dalea off at school, I have enjoyed her kids coming on Monday nights. This week our lesson was on the Aaronic Priesthood. Kailee said the opening prayer and for our song (due to none of us being able to carry a tune) watched a video on YouTube called The Priesthood is Restored. I love the lessons from Desert Book that you can print of the Internet. It had a story about President Monson. The kids really liked it. Then we played hangman with words that went along with the lesson. Nathaniel is the master speller, and it was so funny when I stumped him with the word DEACON.

After our lesson, Carl said a closing prayer and we had treats. I made an apple crisp that was so good! It was a fun night!

Baby Bearded Beanie

my friend at school saw this hat on the internet and asked if I could make it. I told her if she bought the pattern I would love to make her one. Next thing I knew she brought me the pattern and she was surprised I had it for her the next day. Her baby was there after school and we tried it on. Perfect fit. The only problem was his big brother wanted one too. Isn't it cute.

New Recipe




These are the new recipes I tried that everyone is talking about. The main course or entree is pasta taco shells and the easiest dessert ever to make was the cake. I couldn't believe how everyone carried on about my cooking. Dee was really shocked. She said it has been 18 years since she saw me cooking a meal. What was also funny was I think Layne had a hard time letting me. He insisted on helping. I will post the recipes later if anyone is interested.
I already have new ones to try for super bowl Sunday.

College Classes

It is hard to believe that the month of January is already over. It has been a very busy month. I am so excited about starting college classes again. Scared but excited with taking Pre-Algebra and believe it or not Intro to Information Sciences. I am taking a computer class so that I won't be so scared of the things. I had classes all figured out and ready to start only to find out that my algebra class had been canceled and time to refigure out how to take the classes I already had books for. I was excited about having a Monday/Wednesday Class and being done at 7P.M. I was able to rearrange things so that I have class from 4-9P.M. on Mondays. My Wednesday class is from 4-5:30P.M. The really nice thing is that my computer class has gotten done by 8O'Clock both weeks that I have gone. I am having fun and appreciate all the support I am receiving. The kids are doing well with me going to school. Kailee got me ready for my first day including picking my outfit, packing my bag with a snack incase I got hungry, and a note. Mom good luck you really need this.

Lots of new things happening this month

I LOVE this challenge!!!! This week has been full of new things for me. This internship has really been a great experience for me. This week I was able to go to court and see how things work there and I was also able to go to Rigby high school and present on the importance of healthy relationships. Presenting to four different high school classes ranging from 10th grade to 12th grade was so much fun. I could really see myself doing this kind of thing in the future. I am so grateful that the Lord has lead me in this direction and that I was able to get this internship. Sorry I keep posting but I am so excited about all the new things that I get to do.

Tried something new today. The premade pot roast and gravy from Tyson. DISGUSTING! GROSS! NEVER AGAIN!!!!! Sticking to homemade from now on! The only one who liked it was Zach but he eats anything. At least the homemade mashed potatoes were great! Daisy couldn't get enough. Love her chubby belly!

Something NEW

Well I did something new again today!! I love this challenge!!! Yesterday I decided that I would say yes to everything if it wasn't bad. I got a phone call from some random person asking me if I would like to go shooting today it sounded fun so I said yes. They told me it was a date thing but it turned out to be a big group thing. Well the point is is that I actually shot three of the clay pigeons. I was so excited that I actually hit them. It was great!!!!!!! I guess I need to say yes to things more often :)
