JUNE CHALLENGE

MARCH CHALLENGE
Is time going fast for you guys as well? I do know one thing...I am READY for spring! So the RED challenge was quite fun I must say. I laugh when I hear the words,"take a picture for the blog!" If only more were really posted. lol
This month I have been remembering how much fun we had this time last year. I can't believe I was meeting little Daisy for the first time. I wish we could get all the girls together to play.
Well on to the challenge....by the way, this is Mom's idea. The challenge is to FINISH something you have started. Hey, it was either that or show off some of your spring cleaning...lol. Can't wait to see what you all FINISH!!!! GOOD LUCK!

Pumkin Muffins


I have been looking at these all month and I have been wanting to make them. Sorry Jenni I have been so lazy this month I promise I will do better next time and I will get around to making these muffins.

Pumpkin Muffins

You will need:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup canned 100% pumpkin
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon pumpkin-pie spice
  • 1 1/4 cups plus sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the Topping:

  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Directions:

  • Preheat oven to 350.
  • Line a Texas-sized 6-cup muffin tin with 6 paper liners and spray each liner with a nonstick spray. Or you can use a standard 12-cup muffin tin, but you’ll get about 10 muffins.
  • In a medium-sized bowl sift together the flour and the baking powder. Set aside.
  • In a large bowl whisk together the pumpkin, oil, eggs, spice, sugar, baking soda, and salt. Whisk until smooth.
  • Whisk in the flour mixture until combined. Do not over-mix.
  • In a small bowl mix together the sugar and cinnamon.
  • Divide the batter evenly among the prepared muffin cups, sprinkling the cinnamon-sugar on top of each muffin.
  • ake for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool for 5 minutes before turning them out onto a cooling rack.

You all need to try this!

caramel in a can
remove the paper label off your can of sweetened condensed milk.
line your crockpot with foil (to prevent a rust ring).
place your can (unopened) in the crockpot.
fill with water till just above the top of the can.
cover with crockpot lid.
cook on low for 6 hours (or overnight).
use tongs to place can in a cool water bath until comfortable to touch.
open can and enjoy!


My friend called me and told me that she had a yummy treat waiting for her after church. I couldn't believe how easy it sounded. She found it over here check it out.

(Jenni) Awesome Book!!

For my college class I had to read a lot of books. I learned about an amazing author named Brian Selzinick. The book is called The Invention of Hugo Cabret. It has over 500 pages, but the drawing are are so amazing!!! I told Brittney about it and she read it for her class as well. She found out that there is a movie based on the book coming out in a few weeks.
This author has another book called Wonderstuck. I haven't had time to read it, but Brittney and Dalea have. They both really liked it. It just came out this year.

(Jenni) Pumpkin Pie Milkshake

So after writing the challenge, I have seen pumpkins in my sleep as well as every where else! How about all of you??? I was at mom's and was looking through her LDS Living magazine and came across pumpkin recipe after pumpkin recipe. I've always wanted to try a pumpkin pie shake...well let me just say, "They are so delicious!" Hope you try it; if you do let me know if you liked it.

1/2 C. pumpkin puree
1/4 cup milk...more if needed
1/4 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
2 TBSP brown sugar
2 Cups vanilla ice cream
crushed graham crackers

(Kailee and Sally) She's NAPPING!!!!

So Kailee is staying with me and Sally for a few days. Little did I know how this months challenge would mean to the girls. I had a nasty head ache and went to lay down. Carl usally watches Sally for me when I need him to and they usally just watch a movie together. NOT WHEN KAILLE BABYSITS! I found out that the two of them went out looking for Grandpa Glen and came home because they couldn't find him. Later, I found a bag with pumpkin poop and two pumpkins in it. I asked Kailee and she wouldn't answer me. I finally found out that she and Sally had a fun time carving pumpkins together while I was resting. I don't even what to think about it. Sallly with a knife....scary!!!! Kailee I love you, but you are a MONSTER!!!! lol
Sally won't ever want you to leave and will not ever want her brother to watch her.....she had way too much fun with you!

(Sally) Pumpkin

Sally made the cutest little pumpkin in preschool. I also love this picture because you can totally see the mouth full of gum. She is really into gum these days. Thank goodness I buy gum from her dentist. It is supposed to be good for her teeth.

(Sally and Carl) Pumpkins


Carl was so excited about the pumpkin that grow under the fence. We called it the pumpkin chair. Sally was so cute while carving the BIG pumpkin. Her daddy helped her and had her grab some of the guts...she said, "eoooo G-R-O-S-S!" It was funny. She was so proud of her pumpkin (probably because Carl was really wanted the "BIG" one and she knew it lol).
